Maida Flour

Maida flour is a finely milled, bleached wheat flour, most similar to pastry or cake flour in the West. It has lower gluten than flours used for raised breads. Bleaching is accomplished either through exposure to heat and sunlight or through chemicals.

It's method of production is the same as with any other wheat flour, though it has to pass through an 80 mesh/inch (31 mesh/cm) sieve to reach the correct degree of fineness.
